Pre-dipped Cake Pops

Dipping your cake pops can be a source of frustration. I hated doing cake pops when I first started doing them. I do not like molds for anything unless I have to. To this day, my cake pops are not made in molds. Due to this, they are typically larger than most cake pops.

Getting the icing to cake ratio is not easy. It is easier to add more icing than take it out or try to keep adding cake to make it more firm. My ratio is typically 1/2 - 3/4 cup of icing to one cake. Work it with your hands until it has a nice firm consistency, but isn't too firm. Roll them into the size balls that you want then chill for at least 2 hours. If you are leaving them overnight, make sure to cover them with plastic wrap so they don't dry out.
